Biodynamic Cabernet Franc from Oiron, south of Angers, made by Céline and Benoît Blet. It's méthode ancestrale — but disgorged and undosed, so it finishes bone-dry and clean rather than cloudy and off-dry like most pét-nat. Pale pink, crunchy red fruit, sharp acidity, zero added sulfur. Vintage fizz with real depth.
