From the steep marl slopes of Haloze in Slovenia's Štajerska, near the Austrian border, Bojan Kobal makes this from 100% Blaufränkisch — the local Modra Frankinja — farmed under Slovenia's integrated guidelines. Hand-picked, bled for four hours for color, then bottled mid-ferment on its own wild yeasts: a true pét-nat, unfined and unfiltered. Cloudy but bright; strawberry, raspberry, cranberry, citrus, a bready yeast lift. Lively, lightly bitter, gulpable. Roughly 12,000 bottles. Chill, don't shake.
