From João's tiny Chinado project in Alcobaça, on Portugal's central-west coast: a palheto — named for its straw-pale color, the old Portuguese way of co-fermenting red and white grapes into a light red. Hand-picked field blend from two plots, mostly whites (Fernão Pires, Malvasia-Rei) with a little Castelão and Touriga Nacional. Tank-fermented, naturally made. Fruit-driven, fresh, easy. Just 1,169 bottles — a near-forgotten tradition, kept alive.
