Stirm's Calcite draws old-vine Riesling, Chenin Blanc, Chardonnay (25 to 60 years) from the Cienega Valley's rare limestone soils — the ancient calcite the wine takes its name from. Native-fermented and minimally handled, with the Riesling given skin contact for texture, it pours dry and luminous: ripe peach and lemon zest drawn taut over a saline, mineral line. Everyday drinking with genuine terroir beneath it.
